Muesli

 
Introduction
Muesli, a European breakfast standard, is made from uncooked grains traditionally soaked in fruit juice overnight. Try this updated morning treat with rolled oats that can be eaten right away.
 
Ingredient

  • 2 cups rolled oats
  • 1/4 cup chopped almonds
  • 1/2 cup chopped dried fruit (apples, figs, apricots, etc.)
  • 1/2 cup raisins
  •  
 
 
 
Cooking Instructions
  1. Combine oats, almonds, dried fruit, and raisins.
  2. Leave whole or grind in a food processor for a finer cereal.
  3. To serve, mix with hot or cold fortified soy- or rice milk, fruit juice, or applesauce.
  4. Top with fresh fruit if desired, and let stand a few minutes before serving.

Apple Cinnamon Oatmeal

Ingredient
  • 2/3 cup apple juice concentrate
  • 1 1/3 cup water
  • 1/2 teaspoon cinnamon
  • 1/2 cup raisins or currants (optional)
 
 
 
Cooking Instructions
  1. Combine oats, apple juice concentrate, water, and cinnamon in a saucepan.
  2. Bring to a simmer, then cover and cook three minutes.
  3. Remove from heat and stir in raisins or currants, if using.
  4. Let stand three minutes before serving.

Creamy Oatmeal

Ingredient
  • 3/4–1 cup cold water
  • 1/2 cup oats cinnamon,
  • to taste fruit,
  • to taste (optional)
Cooking Instructions
  1. Mix together oats and water and bring to a boil.
  2. Reduce heat to very low and let simmer for 3 to 5 minutes, depending on desired consistency.
  3. Add cin­namon and fruit, if desired.
